Temperance Sour (No Proof Cocktail)

Whether or not you celebrate Dry January, this too easy mocktail feels like a treat, and may be one that you want to bookmark for next summer. It tastes like sunshine and makes us long for the warmer days ahead.

TEMPERANCE SOUR

2 oz. Steven Smith Teamaker No. 18 British Brunch black tea (or your fave black tea) - brewed 8x strength
1 oz. fresh lemon juice
1 oz. maple syrup
.5 oz egg white or aquafaba
12 drops PBP Aromatic Bitters

Brew 8x strength tea in a separate pot. Cool to room temperature. Add tea, lemon juice, maple syrup, and aquafaba to a shaker. Shake for 20-30 seconds. Add 1 large ice cube and 12 drops PBP Aromatic Bitters to your favorite rocks glass. Add ice to cocktail mixture and shake a second time to produce a lovely foam. Strain into rocks glass, and garnish with a twist of lemon.
