Sinless Sparkling Greyhound (No Proof Cocktail)

Even if you aren’t drinking, you can still smoke…your mocktail that is. For this zero proof take on a classic Greyhound, we smoked grapefruit juice with a blend of 25% hickory and 75% pear wood (see below). The result is satisfyingly savory and complex, with a hint of mystery. Cheers!

SINLESS SPARKLING GREYHOUND

.5 oz Wilderton Earthen
2 oz. smoked grapefruit juice
.25 oz Meadowland Syrups Pink Lady Simple Syrup or sweetener of choice
20 drops PBP Lavender Bitters
Touch of non-iodized, kosher salt
4 oz. sparkling water

Stir Wilderton Earthen, grapefruit juice, bitters, salt and syrup until salt is dissolved. Add mixture to your fanciest flute and top with sparkling water.

SMOKED GRAPEFRUIT JUICE INSTRUCTIONS

  • A smoking gun (or more ingenuity than we have!)

  • Grapefruit juice in a container much larger than your volume of liquid, with a cap

  • A small amount of hickory chips and pear wood chips

Partially fill the gun’s chamber with chips. Turn on gun and light. Funnel plenty of smoke into juice container. Top with cap. Turn the container over and over in a rolling motion for one minute. Set aside (capped) while you assemble other ingredients. Any smoked juice leftovers are great for making a vinaigrette with olive oil!
